Chosen to represent Chelmsford in Essex cookbook

We've been chosen to represent Chelmsford in a cookbook of the 20 top restaurants across Essex.

The cookbook is named “Essex Feast” and contributors were selected from recommendations made by dinners across the County. Essex Feast will hit the shelves this autumn, featuring 20 restaurants working with 20 local ingredients. It profiles each chef and the local producer, showing the journey from production to plate.

Head Chef, Matthew Court of the Pig & Whistle Restaurant has a flair for fabulous desserts and chose Chelmsford’s Marriages Flour as a local ingredient for his Chocolate Truffle and Fondant recipe. “We pride ourselves on working with fresh ingredients to provide great food to our customers. Pig & Whistle Restaurant is all about superb service, fine foods, wines and gins in a cosy countryside restaurant.”

The cookbook will also feature some of the restaurants evening menu items including Shiitake mushroom fritters, Grilled goats cheese and beetroot salad, and Oven baked garlic and parsley Cod.

Marriage Flour is milled just 10 minutes from the wheat fields surrounding Pig & Whistle Restaurant at Chelmer Mills in Chelmsford city centre. Run by the Marriage family, Essex millers since 1824, the company is now in the hands of George Marriage and his daughter, Hannah, fifth and sixth generation millers. George was on hand to show Matt around when he visited to see the process and to pick up a bag of flour for his recipe.
